A Very Nordic Potato Ritual

Potato workshop with farmer Leon Johansen from Hyldemarken

At the farm Hyldemarken, more than 40 different varieties of potatoes come to life every year. Leon specialises in growing both Danish and Swedish potatoes, with a continuous focus on biodiversity and sustainable cultivation methods.

At the workshop, Leon will talk about the history of the potato and its production—followed by a guided potato tasting! Hopefully you'll also have the chance to harvest a small selection of potatoes grown outside the restaurant Alle Tiders, and experience the small but classic Danish summer ritual of rinsing freshly dug potatoes.

Leon will be joined by Claudia, one of the talented chefs from Alle Tiders, who will help bring out the unique character of each potato.
